1.Place muesli, rice flour, honey, butter, eggs and ½ cup roughly chopped roasted macadamias into a food processor. Process until well combined. Press mixture firmly into a greased or lined 18 x 28cm lamington tin.
2.Prepare topping. Combine muesli, melted butter, honey, egg, chopped dried apricots and ¼ cup roughly chopped roasted macadamias. Spoon mixture evenly over the base and press down well with the back of a spoon.
3.Bake in a moderate oven (180°C) for 20 minutes or until firm and golden. Allow to cool completely before cutting into pieces. Store in an airtight container.
Chef's note: For the best flavour and texture, use roasted unsalted macadamias and chop them roughly rather than finely. This gives the slices those lovely buttery macadamia pieces and a satisfying crunch.
