Macadamia, white chocolate and cranberry christmas cookies


  • 1 ½ cups white sugar
  • 2 cups light brown sugar
  • 2 cups butter, softened
  • 2 cups Nutworks Chef’s Pantry Raw Macadamia Halves
  • 6 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons salt
  • 4 eggs
  • 2 tablespoons vanilla extract
  • 2 cups white chocolate baking chips
  • 2 cups dried cranberries


  • Siftthe flour, baking soda and salt together in a medium mixing bowl and set aside.
  • Preheat oven to 180 degrees Celsius. Mix together white sugar, brown sugar and softened butter before adding eggs and vanilla.
  • Add flour mixture and stir until just mixed. Add macadamia nuts, dried cranberries and white chocolate chips.
  • Drop cookies by rounded tablespoons on a lightly greased baking sheet. Bake for 10-12 minutes or until just set. Allow to cool and transfer to a wire rack.
