Apricot muesli slices


1 cup Muesli
1 cup rice flour
1/4 cup honey
80g butter or margarine
2 eggs
1 cup Muesli
50g butter, melted
1/4 cup honey
1 egg
1 cup chopped dried apricots


1. Place muesli, flour, honey, butter and eggs into a food processor. Process until well combined. Press into a greased or lined 18 x 28cm lamington tin

2. Prepare topping Combine topping ingredients. Spoon mixture evenly over base. Press down well with the back of a spoon.

3. Bake in a moderate oven (180°C) for 20 minutes or until firm. Allow to cool. Cut into pieces. Store in an airtight container.
