Pineapple and Macadamia Friands

6 egg whites
1 1/3 cups icing sugar mixture
3/4 cup plain flour
3/4 cup almond meal
200g butter, melted
1/2 cup macadamia nuts, toasted, finely chopped
1/4 (240g) small pineapple, finely chopped
Icing sugar mixture, to serve


1. Preheat oven to 190°C/170°C fan-forced. Grease a 12-hole, 1/2 cup-capacity oval friand pan.

2. Place egg whites in a bowl. Whisk for 30 seconds or until frothy. Sift sugar and flour over egg whites. Add almond meal, butter, macadamia nuts and pineapple. Gently stir until just combined.

3. Spoon mixture into prepared holes. Bake for 18 to 20 minutes or until a skewer inserted in centre of 1 friand comes out clean. Stand in pan for 5 minutes. Turn out onto a wire rack to cool completely. Dust with icing sugar. Serve.
