Macadamia Pesto

Delicious fresh macadamia and basil pesto...



100g macadamia nuts (or any of your choice, personally I LOVE macas)
3 cups fresh basil leaves
2 small garlic cloves, very finely chopped/grated
120g grated parmesan (or about a cup)
5 tbs olive oil, give or take
a squeeze of lemon to taste
a dash or two or three of salt to taste


Mix this all in a food processor. easy! Adjust quantities to taste, substitute as required. Keep in a jar covered with olive oil to keep it nice and green.

I quite often whip this macadamia pesto up when our basil is going nuts in the garden (scuze the pun). It is AMAZING over fresh fettuchini, or just on its own with crackers. The other night we grilled portabello mushrooms on the bbq, then dressed them in this pesto for a delish vegetarian dinner.
