Macadamia Lamingtons

Lamingtons are perfect for any occasion. These freeze really well.



340g packet buttercake mix ingredients to prepare cake, such as eggs, margarine & milk
1/2 cup finely chopped macadamia nuts
750g icing sugar mixture
1/2 cup cocoa powder
1/2 cup milk
30g butter
3 cups dessicated coconut


1. Preheat oven to 180degrees. Line a non-stick 19x 30cm lamington pan

2. Prepare cake as directed and fold through chopped nuts. Spread into pan and level the surface with a spatula. Bake for 20-25min or until the cake is cooked when tested with a skewer. Cool on wire rack

3. Sift the icing sugar mixture and cocoa into a heat proof bowl. Add the milk and the butter and stir until combined. Stir over a pan of hot water until icing is smooth and glossy - add a little more milk if needed

4. Cut the cake into 24 pieces with a serrated knife. Dip each cake square into the chocolate icing, then roll in the coconut. Allow to set on a wire rack.
