Macadamia and Cranberry Slice

Morning tea is calling!! Have some tasty macadamia and cranberry slice with your cuppa!

Ingredients

Self-raising flour, 1½ cups, sifted
Dried cranberries, 1 cup
Macadamia nuts, chopped, ¾ cup
Butter, 185g, melted
Brown sugar, 1¼ cups
Egg, 1, lightly beaten
Vanilla essence, 1 teaspoon
Icing sugar, to dust

Method

1. Preheat oven to moderate, 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.

2. In a large bowl, combine flour, cranberries and macadamia nuts. Stir in butter, sugar, egg and vanilla. Spoon into pan and smooth surface.

3. Bake 20-25 minutes, until cooked when tested. Cool in pan. Dust with icing sugar and cut into squares. Keep sealed in an airtight container in the fridge for up to one week.

• Top with sliced strawberries or any other fruit of your choice.
