Lemon Macadamia Cheesecake with Nutworks Lime & Coconut Boost

Super easy dessert that will have mouths watering

Ingredients

Base:
250g Butternut Snap Biscuits
100g Raw Macadamias
125g butter
Filling:
250g Philly Cream Cheese (room temp)
400g Sweetened Condensed Milk
250g Thickened Full Cream
1/3 cup freshly squeezed lemon juice
Topping:
Lemon Curd or Butter
Nutworks Lime & Coconut Sprinkles

Method

1. Melt butter, add biscuits and macadamia nuts to food processor and blend to crumbs
2. Pop into springform cake tin and press down evenly over base and up the sides
3. Put in fridge to set
4. Beat Philly Cream Cheese until smooth, add cream and condensed milk. Whilst processor is still running, add the lemon juice.
5. Pour mixture into base and top with lemon curd (or lemon butter) and Nutworks Lime & Coconut Sprinkles
6. Let set in fridge for a couple more hours before serving.
