Chicken Rolled with Almonds and Apricots

Tasty mid-week dinner option



• 3 macro wholefoods market chicken breast fillets
250g cream cheese
1/2 dried apricots
2 tbs toasted flaked almonds
1 tbs finely chopped chives
1 orange rind
1/3 cup orange juice
1 tbs olive oil
2 tbs flour
1 cup chicken stock


1. Preheat oven to 180°C. Place 3 macro wholefoods market chicken breast fillets on chopping board. Cut each fillet in half through the centre to amek 2 thin schnitzels.

2. Combine room temperature cream cheese, chopped dried apricots, toasted flaked almonds, finely chopped chives and orange rind in a bowl. Spread mixture onto each piece of chicken. Roll up to enclose filling and secure with kitchen twine.

3. Heat olive oil in a large frying pan over a medium-high heat. Cook for 3 minutes or until golden on all sides. Transfer to baking dish. Bake for 10 minutes or until cooked through.

4. Stir flour into pan juices in frying pan until smooth. Gradually stir in chicken stock and orange juice. Simmer until thickened. Strain into a jug. Remove twine from chicken and slice.

Serve with steamed beans and sauce.
