Caramel Nut and Fruit Slice

CHRISTMAS TREATS!! Have this awesome little treat around for this festive month.

Melted butter, to grease
300g (2 cups) plain flour
115g (1/2 cup) caster sugar
180g butter, melted
1 x 395g can sweetened condensed milk (Nestle brand)
20g butter
1 tbs maple syrup
55g (1/3 cup) chopped dried whole apricots
175g (1 cup) dried fruit and nut mix


1. Preheat oven to 180°C. Brush the base and sides of a square 23cm (base measurement) slab pan with melted butter to lightly grease. Line base and 2 sides with non-stick baking paper, allowing it to overhang.

2. Combine flour and sugar in a bowl. Add butter and mix until combined. Press mixture over base of prepared pan and bake for 15 minutes or until golden. Remove from oven and set aside.

3. Meanwhile, to make the topping, place the condensed milk, butter and maple syrup in a heavy-based saucepan over medium heat. Cook, stirring constantly, for 15 minutes or until mixture thickens and turns a caramel colour. Remove from heat and pour over slice base. Sprinkle with chopped apricots and dried fruit and nuts. Use the back of a spoon to press down slightly. Set aside for 30 minutes to cool to room temperature. Cover with plastic wrap and place in the fridge for 1 hour or until set. Remove from pan and cut into squares to serve.
