Brown Rice, Pumpkin and Spinach Salad

Delicious, fresh, tasty and healthy brown rice salad topped with Nutworks Gourmet Sprinkles



3 cups brown rice
Spinach leaves or rocket
60g pepitas
1/3 cup freshly squeezed lime juice
1 teaspoon sesame oil
1 teaspoon brown sugar
¼ kent pumpkin
Tin chickpeas (drained)
60g sunflower seeds
2 tablespoons soy sauce
1 teaspoon crushed garlic
Macadamia oil (for roasting)

1. Cook rice according to packet instructions. Drain, rinse well and set aside to cool.

2. Slice pumpkin and roast in a pre heated 200 degrees oven for approx. 30 mins. Do not overcook. Allow to cool and cut into 1 inch squares.

3. Lightly roast the pepitas and sunflower seeds in a hot frypan with some macadamia oil

4. Combine lime juice, soy sauce, sesame oil, garlic and sugar in a small jug. Gently stir this through cooked rice. Add the spinach, pumpkin, pepitas and sunflower seeds and chickpeas. Toss gently to coat with the dressing.

5. Top with NUTWORKS Lime Pepper Sprinkles
