Apricot Almond Torte

Tasty Apricot Almond Torte delicious afternoon treat!



• 1 1/2 cups caster sugar
• 2 teaspoons baking powder
• 1 1/2 cups dried apricots, finely chopped
• 250g (1 1/2 cups) raw almonds (skins on)
• 12 Sao crackers
• 8 eggwhites
• Icing sugar, to serve


1. Step 1
Preheat oven to 180ºC. Grease and line a 26cm (base) springform cake pan. Combine caster sugar, baking powder and apricots in a large bowl.
2. Step 2
Place almonds and crackers into a food processor. Process until finely chopped but not ground. Add to apricot mixture. Stir until well combined.
3. Step 3
Using an electric mixer, beat eggwhites to stiff peaks. Using a large metal spoon, gently fold eggwhites through dry ingredients. Spoon into prepared cake pan. Bake for 1 hour or until light golden and dry to the touch. Cool completely in pan.
4. Step 4
Gently release sides of pan. Transfer torte to a serving plate. Dust with icing sugar. Serve.
