Anne's Gluten Free Fruit & Nut Cake

Ingredients

2 cups of dried fruit (sultana’s, currants, glace cherries, cranberries)
½ cup orange or pineapple juice
60 grams butter
1 cup of castor sugar
Mixed spice
½ cup crushed pineapple (drained)
1 cup of gluten free self raising flour
1 cup of plain gluten free flour
1 teaspoon bicarb soda
¼ cup hot water
½ cup crushed macadamia nuts

Method

Soak dried fruit in juice overnight.

In a saucepan heat butter, sugar, dried fruit mix and mixed spice – boil for 3 minutes, stirring occasionally.

When mixture is cooled add flours.

Add together bicarb soda and hot water and mix into ingredients.

Lastly add crushed pineapple and macadamia nuts.

Bake in a greased tin at 180 degrees for 1 hour, leave to cool before turning out.

Glaze

¼ cup marmalade jam heated, brush over cool cake.
